Allergy Free Valentines Day Cupcakes

This year, our little man wanted to take "his cupcakes" to give out to his teachers and school staff. He is always cooking in this house! He LOVES it. It's also a great way to teach your little ones about their food allergies and how to "work around them". We have many cupcake recipes that we use. I have posted several on this website that you can explore; however, it really just depends what we have in our kitchen cupboards!  So, here is the recipe we used..this time:

1 cup of flour of your choice (we just used regular self rising flour)
1 teaspoon of baking powder
1/4 cup of sugar
3 tablespoons of water
1/4 of veggie oil
1/2 cup of milk of your choice (we use rice and sometimes soy)
1 teaspoon of vanilla
1 large smashed banana

Mix all the wet ingredients in a large bowl. In another bowl sift and mix dry ingredients. Slow incorporate ingredients in large bowl and stir. Simple as that! 

Fill your cupcake pan with some Valentines Day cupcake wrappers and fill half way up with mixture.

Bake at 350 degrees for about 22 minutes. Check with toothpick by sticking in middle cupcake to see if dry. If so, then they are completed.

Let cool and then add icing and decorations. We used Pillsbury vanilla icing, added one drop of red food coloring to make a sweet pink color, put in a sandwich bag and cut large hole in corner to get a thicker swirl look then sprinkled with red sugar sprinkles. They were delicious!  enjoy!
